Cinnamon Apple Bites

What I love most about these Cinnamon Apple Bites, besides being vegan and incredibly delicious, is how easy they are to make. There are no complicated steps or unusual ingredients, just straightforward, flavourful baking that will delight anyone who makes them.

Ingredients (makes 9 squares):

1 puff pastry sheet, thawed (the frozen Pepperidge Farm variety is vegan)

2 apples cored, peeled & thinly sliced

1 tablespoon vegan butter, melted

1/4 cup sugar (I used organic, bone char free)

1 tablespoon ground cinnamon

Parchment paper

Baking sheet

Icing/confectioner’s sugar to dust *optional

Directions:

Preheat oven to 375F.

In a small bowl, mix together the sugar and cinnamon — set aside.

Peel, core and cut the apples into thin slices (about 5mm thick) — set aside.

Roll out the thawed puff pastry sheet into an approximately 10×10 inch square (I did this on a sheet of foil to reduce mess), and coat all of it with a thin layer of melted butter — set aside the remaining butter for later.

Cut the large puff pastry square into 9 equal-sized smaller squares then put 1 teaspoon of the cinnamon sugar in the middle of each small square and use the back of the spoon to spread it out into a circle — save the rest for later.

Layer the apple slices onto the cinnamon sugar (I used about 6 apple slices per square) then evenly coat all the cinnamon apple bites with the remaining butter and cinnamon sugar.

Transfer each square onto a parchment-lined baking sheet and bake in the oven for 12-15 minutes, or until golden brown.

Place the cinnamon apple bites on a cooling rack for about 10 minutes before sprinkling with confectioner’s sugar (optional) and eating.

For gluten-free make sure you use pure cane sugar, gluten-free safe cinnamon, and a gluten-free brand of frozen puff pastry.
