Quick, easy, vegan and super tasty … need I say more?
Ingredients (makes 9 squares):
1 puff pastry sheet, thawed (the frozen Pepperidge Farm variety is vegan)
2 apples, peeled & thinly sliced
1 tbsp vegan butter, melted
1/4 cup sugar (I used organic, bone char free)
1 tbsp ground cinnamon
Parchment paper
Baking sheet
Icing/confectioner’s sugar to dust * optional
Directions:
Preheat oven to 375F.
In a small bowl, mix together the sugar and cinnamon – set aside.
Peel, core and cut the apples into thin slices (about 5mm thick) and set aside.
Roll out the thawed puff pastry sheet if it’s smaller than a 10×10 inch square (I had it on a sheet of foil to reduce mess), and coat all of it with a thin layer of the melted butter.
Cut the large square into 3×3 pieces (making a total of 9 equal sized squares).
Put 1 tsp of the cinnamon sugar in the middle of each small square (use the back of the spoon to spread out into a circle).
Layer the apple slices onto the cinnamon sugar (I used about 6 apple slices per square).
Coat each apple slice with any remaining butter and cinnamon sugar.
Transfer each square onto a parchment lined baking sheet and bake in the oven for 12-15 minutes, or until golden brown.
Place the cinnamon apple bites on a cooling rack and after about 10 minutes, sprinkle with confectioner’s sugar (if using) and enjoy!
For gluten-free make sure you use pure cane sugar, gluten-free safe cinnamon, and a gluten-free brand of frozen puff pastry.
