This may come as a surprise, but not all roasted peanut brands that you can buy in stores are vegan. Some — because they contain gelatin — aren’t even vegetarian. If you want to avoid eating ingredients you weren’t expecting, try out this great recipe …
Ingredients (makes approx 3 cups):
3 cups of raw (shelled) peanuts
1 teaspoon table salt
*you can add a good pinch of garlic powder and onion powder and some paprika for a dry roasted taste
Directions:
Pre-heat oven to 350°F.
Blitz your salt (and spices, if using) in a small food processor, spice grinder or mortar and pestle — whatever you’ve got to hand — to make a powdered salt. This step can be skipped but making powdered salt helps it coat and stick to the peanuts a bit better.
Place peanuts in a single layer onto a parchment-lined large baking tray.
Roast the peanuts in the oven on the middle shelf for 15-20 minutes or until the nuts just turn brown (they continue to cook as they cool).
Remove from the oven and evenly sprinkle on the salt to taste (you don’t need to use it all) then use a spoon to mix and toss together to coat the nuts.
Let the nuts cool completely before eating and store in an airtight container (they should keep for about 3-4 weeks).

I love salted roasted peanuts. One of the best things about roasting at home is that I am also able to include homemade caramel, if the mood suits me.
Another nut I cannot get enough of roasted is pecans. I have a jar of them and they are high on my list of favorite snacks. 🙂

They’re my go-to snack because of the protein and I had no idea my favourite brand was not even vegetarian. I now just eat my own so I can be sure I’m not accidentally eating something I don’t want to!
