If you’re looking for something to bake that not only tastes absolutely amazing but also hits all your food aesthetic dreams, this is the tart for you! It’s also deceptively easy to create and makes a great dish to enjoy any time of year.
Ingredients (serves 4):
1 cup plain, whole fat Greek yogurt
6oz packet crumbled feta
1 tablespoon honey
1 garlic clove, minced
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
salt and black pepper
olive oil
1 medium red onion, peeled
1 medium yellow onion, peeled
1 sheet frozen puff pastry, defrosted
Directions:
Set out the sheet of puff pastry to defrost.
Preheat oven to 400℉.
In a medium bowl, mix together the yogurt, feta, honey, garlic, rosemary, thyme and a pinch of black pepper until well combined. Set aside in the refrigerator.
Carefully slice the peeled red onion crosswise into 1/8-inch thick rounds. Arrange in a single layer on a microwave-safe plate, brush with olive oil, season with a pinch of salt and microwave on high for about 7 minutes until very soft, golden and with some browned spots (microwaves will vary so less/more time may be needed — 7 minutes reflects an 1100 watt machine). Repeat with the peeled yellow onion.
Unfold the defrosted sheet of puff pastry onto a parchment-lined baking sheet. Use a rolling pin to roll out to approximately 14″ x 9″. Leaving a 1/2-inch border, evenly spread the Greek yogurt mix onto the puff pastry and then carefully top with the onions. Bake for approximately 15 minutes or until the pastry is golden and puffed and the onions have taken on a more deeply golden colour.
Drizzle with olive oil, some more honey — throw on a few fresh basil leaves or baby spinach (optional) — then cut into 8 pieces and serve.
This tart is best eaten fresh from the oven but it can be kept in an airtight container in the refrigerator for up to two days.

You can definitely use non-dairy alternatives to the Greek yogurt and feta or just use a non-dairy cream cheese with extra veggies!
